Hello Sinner man..

We do indeed have the traditional turkeys..

I raised two this year and named them Thanksgiving and Christmas..

Old Christmas misses his buddy this morning as TG is all nice and done and sitting cooling in my wok on top of my stove,waiting to cool for the next process..

I clean and gut them and usually they go around ten to 12 pounds for our family..

I wash them ...salt and pepper them and use a combination of cloves..anniset...oregano and sage all crushed at the same time in my trusty mortar with my stone pestal..

then sprinled on top and inside old TG and then he goes in my big wok,breast down,and more spices on top and then 1-2 cups of cranberry juice added and then covered and into the oven at 350F for 4-4 1/2 hours..

Then I bring him out to cool..(That is where he is now..)

I will then strip off all the meat..it falls off and is so tender it is like eating air..and tasty.....HMMMMMMMMM...MMMMM....good..!

I do them this way as it is an eating turkey..not a picture taking ,presentation turkey..



(Take the turkey skin off in big pieces and save...once meat is on platter sorted and stripped,spread out saved turkey skin to keep meat from drying out...)



As it is about 8 hrs, before dinner,I will then refrigerale the meat and microwave the platter with skin on top before serving...this gives some extra flavour to the meat from the reheated skin...



I cook up the traditional cranberries from scratch using orange peel and maple syrup ..other than plain old sugar..

and of course all the trimmings,like a side of squirrel nuts and beaver tail..and a bit of rat liver ..





It is a beggar of a market...my old port is down over $800 grand..on paper...looks like it did 5 years ago..

I lucked in and sold some coal stock at the peak of the coal market so had big whacks of cash before this started two months ago and bought KXL twice at the bottom..so I thought ..and all the way down to present ...and will get the 800K back when the market turns..(I bought other stuff that were screeming buys too)...

Have enough cash for this year..not worried about next year..

Who knows..maybe we will all be eating rice with chop sticks then..and dealing in gold zlotys..

Don't worry about the gold dipps..that is just the traders selling off their gold positions,the last ammunition they had to cover their losses ...on other stuff..Gold will be back with a vengence in a few days..



And you have a great Columbus day ,if you celebrate it...some do..some don't...

In New York State, Columbus Day is a holiday, as government offices and public schools are closed. However, the stock markets remain open.
