As I've said many times, I don't know the first thing about this technology, but it's starting to come together for me, and I can now more readily understand the infamous "brittle" comment. Don't you hate it when you serve pate on crostini wafers (my, I don't think they are 8 inches, though), and your guest bites into one, and the wafer is so brittle that it breaks up, and your guest is embarrassed with pate and crumbs all over his/her lap and your carpet, and as a result, you are embarrassed for him/her? That's unacceptable in a good wafer, so let's hope there's no brittleness associated with POET wafers, unless we can figure another use for them...
