Labor of love, as you know. I dry rub them the night before, letting them soak it up over night in the frige.. sometimes my wife mixes something up, avoiding brown sugar, or I'll use some that I bought online. I use a lump hardwood charcoal.. burns cleaner and longer, and adds a much better flavor then regular charcoal (avoid Cowboy brand) I'll include a few chunks of soaked apple or hickory wood. I use a mop throughout the smoking proccess.. mix of apple cider vinegar and various olive oils to keep them moist. Then apply the BBQ sauce of choice, usually Corky's or Rudy's (but obviously there are a gazillion out there & available) about 30-40 minutes before they come out of the smoker. Then have BBQ sauce on the side to apply as needed when eating.... and a really cold microbrew always within reach...
